Some nights my stomach demands me to cook a quick meal so I can get in there and eat it as fast as possible. And recently I've had a major obsession with salmon! On tonight's menu I knew I had to put my obsession into play and make a Soy and lemon glazed Salmon! The best part- it's healthy (and taste SUPER yummy!). The trick to perfectly cooked salmon? BROILING IT!
If you didn't know, I love broiling things. It's a fast way of cooking and melting cheeses, veggies, and fishes (and of course QUEST BARS!). On top of it being healthy and super tasty, this meal only took 15 minutes in total!
For the sides I broiled some asparagus and lemon wedges. Then I cooked up some boxed whole grain couscous with the edition of freshly shaven, off the block parmigiano reggiano cheese.
Overall this fish came out extremely yummy and flavorful and cooked so perfect it's taste could be described as buttery. I bought this salmon from my butcher, so it wasn't frozen. Which makes a HUGE difference! The fish overall tasted so much more fresh, and the colors are super vibrant! I left the skin on when cooking so I could cook it in it's own natural fat (the skin holds a lot of fat which is good for cooking. PLUS this is where most of the health benefits in Salmon are! All those yummy omega 3 fatty acids!)
Another bonus was the glaze was only three ingredients! Yep, just low sodium soy sauce, freshly squeezed lemon juice, and the secret ingredient? Sesame oil. Just a little adds a whole lot of great flavor!
Sesame oil has such an aromatic fragrance. The smell brings me back to eating at small hole in the wall Vietnamese resturaunts. It gives such a nice Asian flavor to any meal. In this recipes case, it gave just enough of an Asian flare without being to overwhelming. This way it was perfectly paired with asparagus and couscous (obviously NOT an Asian pairing)
So without further ado....
SOY AND LEMON GLAZED SALMON WITH BROILED ASPARAGUS AND GARLIC PARMESEAN COUSCOUS
Serves: 2
2 fillets of fresh wild Alaskan Salmon
1 tablespoon of low sodium soy sauce
1 tablespoon of freshly squeezed lemon juice
1/2 teaspoon of sesame oil
3/4 lb of asparagus
4-5 lemon wedges
1 box of whole grain couscous (I used Near East garlic and oil oil whole wheat couscous)
1/4 cup of freshly shaven parmigiano reggiano cheese (preferably from a block)
Salt and pepper
INSTRUCTIONS
Turn broiler on.
In a small bowl mix together soy sauce, lemon juice, and sesame oil. Set aside.
In a deep pan, put in asparagus, lemon wedges, and half the glaze. Put in broiler for 3 minutes. Take out and place in salmon (making sure you move asparagus and lemon wedges toward the edges and salmon in the middle). Salt and pepper the salmon to your liking. Pour the rest of the glaze (I reserved about 1/4 of the glaze to pour over again after the salmon cooked.) over the salmon and put back In broiler for 6:42 seconds (this yielded me the most perfectly cooked salmon. Every second counts!). While salmon is cooking cook couscous according to package directions.
TIP: add the cheese right after you poured the couscous in the pot. This way, you avoid getting a clumpy couscous. It also ensures the cheese will fully melt.
When salmon and asparagus is done, take out and pour over the remaining sauce (if you still have any).
