Monday mornings are (sometimes) VERY tiring (it's currently the day after and I still can't get over the early week slumps), so for breakfast on this beautiful "Vegan Detox" morning I thought I'd go with something a WHOLE lot easier to prepare.
I had some Nature's Path Organic cornflakes with some almond milk and fresh fruit (including some of the pictured pineapple- which by the way, the best way to eat pineapple is when you actually buy the WHOLE fruit and cut it yourself!!). AND YES- the cornflakes are 100% vegan and sweetned with organic fruit juice! So no refined sugar in this cereal- making it somewhat guilt free:)
For lunch I was feeling crafty per usual. I froze a whole banana and made a acai and 'nana ice cream😍 I topped it with some Bear Naked vanilla almond granola, chia seeds, pumpkins seeds, sunflower seeds (yes, I find great satisfaction in seeds.), unsweetened coconut flakes, and some raspberries!
So yes- I understand that this meal is full of fats and carbs. ALL nuts/ seeds are full of good fats, such as polyunsaturated and omega 3 fatty acids. Btw- I hate it when people cut any macro from their diets BECAUSE WE NEED THEM ALL! Obliviously we wouldn't be eating them or counting them if they weren't a necessity. PLUS being vegan for a day is supposed to make you feel like you have absolutely ZERO restrictions calorie and macro wise. So YES I love the idea of veganism both for the benefits of our planet and health.
I made my nicecream bowl by blending up a frozen banana, a pack of frozen acai from Sambazon, a handful of (possibly rotten) spinach (it smelt terrible but YOLO!!), stevia,and just a dash of Almond milk. Since I was in the mood the make food at 10 in the morning I stuck this mixture in a freezer safe plastic container and covered the top with plastic wrap so it would get Icy. Once chilled in freezer for at least 45 min (I took mine out in 2 hrs) scoop and enjoy!
For a snack I had a cucumber with hummus, because those may arguably be my favorite combo.
After practice It was time for me to make dinner! I made dinner late so I was pretty tired- but Neal prepping really came in handy!
I made a vegan sweet potato hash with sautéed mushrooms, onions, tomatoes, carrots, and more of the "rotten" spinach (because it hasn't hurt me YET). I added some cumin, basil, Rosemary, red pepper flakes, salt, and pepper to taste. I topped it all with some warmed hummus (which grew in size once put in the microwave somehow) and SRIRACHA- because I didnt just name my blog that for nothing!
It was so tasty and I will definitely be trying again! It kept me so full that I didn't even have a late-night sweet tooth craving (because literally every night I do. #zeroregrets).
Today was yet another successful vegan detox Monday!
