So lately I have been pondering the question.. What's for breakfast? For some reason if I had to choose my favorite meal to cook, it would probably be breakfast. Lately I have been obsessed with oatmeal and all the flavor possibilities! Tomorrow morning I already have mocha oatmeal planned (yeeee I'm so excited!!!) and on thrusday guess who is making over night oats in a PB jar? THIS GIRL! I'm so happy to say I've finished my first almond butter jar (trader joes;) ) and it's time to make oatmeal in it! I CAN NOT WAIT! This morning I switched it up and had a parfait made with Greek yogurt. I personally don't really like yogurt- but like I said recently my palate has changed. With a little crunch l, it taste so yummy! I also broiled a peach (can't you tell I love to broil things??) which was so yummy😍 defiantly recommend it, especially since peaches are in season this July!
Another thing that has been on my mind lately is what can with stand the freezer? Who knew I could freeze bread and fresh herbs (note to self- fresh herbs tend to be soggy once thawed😓) ANY WAY- my freezer is STOCKED! I have a bunch of sugar free desserts (ice cream, fudgesicles AND cool whip. Whoops) and then one whole shelf is full of Van's gluten free waffles (my dads favorite) we LITERALLY have had 6 boxes at once... But now we are done to three... Thank God! I also froze some fold it flatbreads because I never ended up using them- until of course I put them in the freezer *sighs* ( ANOTHER note to self- don't microwave frozen breads... They Taste like rubber) I also have a whole loaf of Ezekiel bread jammed into the freezer! And of course as I said before, I have chives. Chives are currently sitting in the bottom shelf of my freezer. I LOVE CHIVES. And of course... I only used them once and herbs go bad quick. I couldn't imagine my life without them so I popped them into the freezer, and BOOM herbs whenever.
For dinner tonight I included some frozen dinner essentials. I used 1 cup of Trader Joe's quinoa vegetable medley On top of a bunch of greens. I topped it with a sunny side up egg, cilantro, feta, AND OF COURSE... SRIRACHA! It was heaven. The yolk was runny *moans*, and the cilantro added such a fresh touch to the salad you would have never known it was from the freezer! Oh and the best part- I cooked this in less then 10 minutes (#multitasker).
