Who else loves the southern classic- Mac and Cheese? If I (and my metabolism) could eat Mac and cheese every day, I wouldn't seize the opportunity😉. But unfortunately our bodies simply can't deal with all the dairy and carbs. So my solution? Instead of macaroni noodles, use cauliflower! SO much lower in carbs and it's not stripped of any nutrients! And for my sauce- NO CREAM! Just almond milk and nonfat Greek yogurt (oh and of course cheese!). I used 2% milk fat cheese (in sharp cheddar and a Mexican 4 blend cheese version; because why not?) I also used Pecorino cheese. Talk about flavor! After bring my sauce to a simmer, I added the veggies then off to the oven! This is a SINGLE serve dish, so if your home alone and in the mood for the microwave Kraft, hold your horses because this Mac and Cheese is

CAULIFLOWER MAC AND CHEESE
SERVING SIZE: 1
INGREDIENTS:
1 1/2 cups of steamed cauliflower florets
1/2 cup of unsweetened almond milk
1/4 cup of nonfat plain Greek yogurt
1/4 tablespoon of light butter
1/2 cup (1/4 of the mixture for sauce, 1/4 of mixture for topping) of low fat cheese(s) of choice. (I used 2% sharp cheddar, 2% Mexican four cheese blend, and pecorino cheese)
1/2 a teaspoon of parsley
1/4 teaspoon of Dijon mustard (to bring out the flavors in the cheese. You can't taste the mustard, but this step is optional.)
1/ 2 teaspoon of garlic powder
1/3 teaspoon of red pepper flakes (Optional- for a dash of heat)
Salt and pepper to taste.
INSTRUCTIONS:
Preheat oven to 350f. In a large sauce pan bring butter, almond milk, Greek yogurt, and the spices to a simmer. Add 1/4 of the cheese Mixture and stir on low for two minutes, or until the cheese is combined. Then add in your stem cauliflower and mix. Turn heat to the lowest setting add the lid onto your saucepan.
In a small pan or oven safe dish add Mac and cheese mixture. Sprinkle on remaining cheese. Bake for 15-17 minutes or until the cheese is nice and gooey. Remove and eat immediately! Enjoy:)
